Tortilla española

Ingredients:
- ½ kg potatoes peeled and cut thinly
- 1 onion chopped
- 4 eggs
- salt
- 1 cup olive oil ( not extra virgin )

Spanish Tortilla

In a non-stick pan, heat the oil and add the potatoes mixed with the chopped onion and salt on medium heat. Cover ( the potatoes should not be fried nor browned )
In a bowl, beat the eggs. Drain the potatoes if oily, add them to the beaten eggs and mix well. Poor the mixture in the hot non-stick- pan,  press down the sides.
When the tortilla starts to brown, put a flat cover or plate over and turn the tortilla gently on the other side to get it golden brown.
