Serves 4 Ingredients: - 250g of SUPER fresh anchovies - 4 garlic cloves (chopped) - One parsley bunch (chopped) - Lemon - Salt - Freshly grounded coloured pepper - Extra virgin olive oil
In a Spanish restaurant if you order fresh anchovies, they will serve you “boquerones en vinagre”, a very popular tapa all over Spain.
To clean the boquerones, first cut off the head and clear the boquerones from their inner organs under running tap water.
Take the spines off. Place them in a large deep plate (not metal) and cover them with vinegar. Put them in the fridge for 2 hours.
Strain them, dry them with kitchen paper and place them in a flat serving plate.
Cover with extra virgin olive oil, garlic, salt, freshly grounded pepper and garnish with parsley.
