The Mediterranean diet has been one of the healthiest in the world and its proven medical advantages may help protect you from chronic diseases. As with all diets the more basic the dish, the more common foods and the fresher the ingredients the healthier you will be. The healthiest way to eat is with the seasons and the Mediterranean dishes do just that!

Spanish Olive oil is the pillar and the base of the Mediterranean diet .
We all know how good it is for the heart, an anti cancer and an antioxidant ‘anti aging’ substance. The best ´fat´ - Olive oil, however, has to be used with moderation.
Paella. (it can be cooked in a healthier way, with less rice or with brown- rice and more vegetables)
Tapas. prawns al Pil-Pil, gazpacho (without bread)

Fish is a major part of the Mediterranean cuisine but not farm raised fish. Fish raised in farms in giant pens in sea water they are fed with pellets made from ground fish meal, flour and oil, this makes the fish grow more quickly. All the fish have the same taste because they are eating the same food and they are given antibiotics against fish disease (sounds like the chicken and the cattle scenarios all over again).
